Need to clean out some things in the fridge. What can I make from these? Have an ok stocked pantry of oils, spices, etc, but don't want to waste these veggies.
- eggplant - a couple small potatoes (the mini kind) - french green beans - half can of tomato paste from a few days ago |

Saute garlic in olive oil on 1/2 of a large pan - 3 mins
Saute the tomato paste (no oil) on the other half - 3 mins Add water, maybe 3/4 cup, and stir to create a sauce. Add oregano to season. Simmer for 5-10 minutes, and stir in the cooked potatoes, green beans, and eggplant. (I am no expert in cooking eggplant, but I think you peel it and then fry in olive oil or bake). |
| I would do a potato and green bean warm salad, then fry the eggplant and top with spicy tomato sauce. |

| if you have cheese and tomato sauce you could do a simple eggplant parm type dish, with roasted green beans and potatoes on the side. |

I'd do spicy eggplant, Indian. Roasted the eggplant in olive oil and salt. Sautée the other stuff, with onion and garlic, add garam masala, ginger, hot pepper or a fresh jalapeño if you have it. A can of diced tomatoes too.
Mix in roasted eggplant, serve over rice. |
| You don't need to peel eggplant. You can slice it and bake with olive oil and salt. Or wash it and bake it whole, scoop out the inside and mash it up with mayo and other spices as a dip. You can also add hummus for baba ganush |

I'd dump the paste, and just cube (potatoes and eggplant) and roast the veggies with olive oil, salt and pepper. |
