black bean soup
-recipe was given out by my gym eons ago. Not sure of the original source. It is quick and easy for making after work.

2 cans black beans, drained and rinsed
1 bag veggie crumble
1 bag frozen pepper strips
1 jar salsa
1 can broth (veggie, chicken or beef)
Chili powder to taste

Put half the beans in the pot and mash with a potato masher. Add everything else. Bring to a boil and simmer ~15 minutes.

Serve with cheese and/or sour cream and/or chips.

This makes a very thick soup. Add another can of broth if you like a thinner soup. You can make this spicy or mild.

If you don't like veggie crumble (I'm avoiding processed soy) and don't mind meat, add either browned sausage, or chopped smoked sausage.

If you don't like canned ingredients, feel free to soak your own beans, make your own broth, and salsa fresca.

They don't always have escarole, so we've substituted dandelion greens. Other substitutes might be mustard greens, kale or swiss chard, etc.

Onion soup

Soften white onions, Spanish onions, shallots and garlic in some oil or butter, add 5-6 cans of fat free, low sodium beef broth, some marjoram and some sherry to your taste, let simmer for an hour or so. Ladle into soup bowls and top with a slice of French bread and a slice of Gruyer. Put in oven on broil until cheese is bubbling and golden. I could eat it all day, every day.

I also second the lentil soup.

i like to make a simple chicken soup with onion, celery, carrot, garlic, leftover rotisserie chicken carcass and bits of meat.

Crock Pot Beef Stew

2 cans beef gravy
1 can tomatoe soup
Cube stew Beef
Carrots cut in large pices
celery cut in large pieces
Potatoes cut medium
1 large or two med onions cut thick.
I tsp pepper

Combine all ingredients & Put on low for 8 hours. If you want, you can brown the beef slightly before putting in the pot.

My Grandma started making this dish in the 1930's.
