| We aren't really into sandwiches, but I also don't really want to spend time cooking and cleaning up for yet another meal. We used to eat a late breakfast and then not really think about lunch till we were starving and cranky and then someone would run out for takeout, but we're trying to cut back on our eating out. Also, the little one is requiring more of a schedule these days, but I'm at a loss for any good ideas. |

Eggs. So versatile and most egg dishes can be put together very quickly. Finish your meal with some fruit and yogurt and you're set.
Some of my favorites: Shakshuka, a dish of eggs poached in spicy tomato sauce; Baked eggs any number of ways; Poached eggs on top of sauteed greens and a toasted English muffin; Ready-to use polenta (TJ has it) pan-fried and topped with sauteed mushrooms and a fried egg. All of these can be done in less than 30 minutes. |
| Often we'll have leftovers, but otherwise a rotisserie chicken and some green salad, or soup. |

Whole wheat pita pizza. 10 minutes in a toaster oven.
Pasta - tortellini, spaghetti. Hummus and veggies and pita bread. Homemade soups. Mac and cheese bites (weelicious website). Steamed corn, peas, spinach, green beans, or broccoli on the side. Fresh avocado. Mild guac. |

| I make a ton of cold salads each week and always have something avaialble to scoop up and put on a plate. Today's lunch was tuna salad sandwiches. Tonight I'm spending about an hour and a half making a bunch of cold salads that we can have for the week ahead. |

Today we had a brunch essentially of omelettes and biscuits. Saturday we often eat out - yesterday we went to a vegetarian place for lunch. |
