Moving away from boxed mac and cheese

I cook the pasta, put in the colander in the sink. In the same pot, I put maybe 1/2c to 1c milk, stir in 1 tbsp flour, a sprinkle of onion powder, garlic powder, ssalt, pepper, and dried mustard. Stir over very low heat until milk thickens slightly. Then add shredded cheese (whatever I have) OR velveeeta, or a combo of both, stirring until it melts. When it's smooth, I add the pasta back in. My kids also like peas, so I throw some frozen peas in there and let them warm up.

They love this meal. If anyone other than the OP is reading this, the benefit to making your own from the get-go is that your kids don't get used to the box crap, and they will clamor for your homemade mac and cheese.

(I don't love using velveeta, but it melts so well and the sauce never breaks...)

It tastes the same. Comparing the labels it appears to be healthier than the boxed mac n cheese.

It is super simple to make. You can probably use a healthier cheese, but you might need to up the butter or add a splash of milk to it.

The velveeta part seems to defeat the purpose. I'd rather my kid eat Annie's box mac 'n cheese than homemade velveeta mac 'n cheese.
