Summer pool dinners - post your ideas

Pasta salad in any form. I like bowtie pasta with cherry tomatoes, basil, mozzarella, and grilled chicken. Or penne with artichoke hearts, feta, salami, spinach, and chickpeas.

Baguette with sharp cheese and sliced deli ham. Fresh fruit.

Big tupperware of sliced veggies, crackers, cheese.

Green salad with thinly sliced grilled steak and crumbled blue cheese.

Sounds great! I also like a pear and a small snifter of Frangelico. You can never go wrong with a delicious piece of fruit.

We do a lot of the same (minus steak). We grill, but often have easy sides: baby carrots, fresh fruit, cookies, etc. Because we often come early and don't eat dinner for a few hours, I'm leery of bringing any fish or things that need to be kept very cold. Most coolers only go so far.

With warm dishes, just remember that you can't bring any glass or breakable containers. Someone at our pool did a few years ago and dropped it on the pool deck - the pool was closed for the rest of the day. Don't be that person.

I would take any mayo-free pasta salad recipes you guys would want to share!

I always buy it bc mine comes out horrible.

I like wrap sandwiches. Put everything on a flour to and roll it up. Pasta salad with vinaigrette. Fruit salad is good too. Nutella is good for dipping strawberries.

The tough part is that most require some prep. So it's hard to know what you're wiling to do, and/or what your schedule allows.

A few ideas:
-chicken legs (baked and served cold/room temp)
-pasta salad
-sandwiches/salads
-homemade pizza, served room temp
-takeout
-cut fruit to go with all of it

I always end up bringing leftovers to the pool!

A hot rotisserie chicken is also good. Add some veggies and leftover potatoes and there aren't any leftovers.

I do a lot of salad with beans or shrimp on top.

Buy a big container for watermelon slices.

If we grill, I do burgers or salmon and a veggie. Salad on the side or just carrots and cukes. Kids are hungry enough that they eat it all!

11:27 here.

You will get tired of eating at the pool every night and there will be nights of bad weather. I use my crock pot those days! Pulled pork or even a whole chicken. Chili.
