Breakfast burritos freeze well. Just undercook the eggs a little bit and make sure to add cheese when rolling. I pop them in the microwave. If I have time, I then put them in a pan on the stove to get them crisp on the outside, but they are good without that step.

I freeze flat in ziplocks, to save room in the freezer.

I like to double or even quadruple these recipes. For the sauces, I freeze in individual portions. Some of the sauces are time consuming, but if you make 2-4x the servings and freeze it’s worth it to have nice homemade sauces
