Just got my 1st Le Creuset pot! What should I make?

I've been drooling over these for years but couldn't
justify paying so much money. Well I finally got one (6 quarts) on sale
and would love suggestions on what to make?

I got one for Christmas and made sweet potatoes. Since then I've done red beans for red beans and rice as well as as chili. I think today I'm going to do something like chicken tortilla soup since my chuck roast hasn't quite thawed yet.

+1 If you have Amazon Prime, you can watch the first episode of Julia Child's original show and watch her make this recipe. It is worth a half hour of your time.
