| Our friends have always hosted us for various dinners and get togethers and I wanted to repay the favor but everyone can only get together for brunch. I'm not a brunch baker/ cooker per say-just make quiche here and there. I was thinking some fruit, mimosas, rolls and maybe two quiches. got any good recipes? Or for something even easier? like a breakfast casserole or strata that I can make the night before? What are some successful brunch menus you have used? Recipes? Thanks! |

Mimosas are a great idea! Or even just some nice prosecco, won't break the bank and will feel indulgent.
For brunch, I would make an egg dish, a fruit salad, a vegetable salad and something sweet. Toss in some store-bought bagels, cream cheese, granola and yogurt and you have yourself a decadent brunch. Here are some suggestions for each: Eggs: http://www.davidlebovitz.com/2009/08/herbed-ricotta-tart/ http://smittenkitchen.com/blog/2010/04/shakshuka/ Salads: http://www.seriouseats.com/recipes/2012/02/bi-rite-markets-fennel-blood-orange-and-avocado-salad-recipe.html http://www.fizzleout.com.au/2012/11/root-vegetable-slaw/ http://www.nytimes.com/recipes/1834/Winter-Fruit-Salad.html http://www.epicurious.com/recipes/food/views/Citrus-Salad-with-Ginger-Yogurt-231279 Sweets: http://www.kingarthurflour.com/recipes/scones-recipe http://www.nytimes.com/2013/01/09/dining/glazed-cinnamon-rolls-are-a-sticky-temptation.html?ref=dining&_r=0 |

Baked French toast would be yummy and you can put it together the night before: http://thepioneerwoman.com/cooking/2010/05/cinnamon-baked-french-toast/
That plus a quiche (not sure you need two), fruit, coffee and juice, and don't forget the bacon! |

Three recipes that we love. The first two are strata and all three are best made the night before and let sit overnight, then baked in the morning. They are wonderful served right from the oven:

Came out wonderful. The last, we found while we were in Dutch PA and we loved it. The little PA Dutch restaurant that we went to for brunch a few times had a different flavor every day: http://www.food.com/recipe/amish-baked-oatmeal-117211 |
| Pillsbury frozen biscuits are really good--the ones in a bag, not the canned ones. |
| For the sweet tooth, cinnamon rolls are yummy and can be made the day before. Just reheat and apply the frosting the next morning!!! |
| Whole foods also has quiche in the ready made section that just needs heated. Hash brown casserole is also easy with only a few ingredients |

Brunch is an awesome meal to host for those of us who aren't gourmet cooks. Google recipes for baked challah french toast; frittatas. Bake or buy muffins. Bagels and cream cheese can be picked up. Get or make a fruit salad.
This is very easy and pretty awesome: http://www.epicurious.com/recipes/food/views/Three-Cheese-Baked-Eggs-with-Roasted-Peppers-105731 |
Thanks everyone! Great suggestions. I'm going to go with the French toast casserole, the quiche, assorted croissants and rolls and fruit! And some bacon . Do I need a spinach salad in there too, or will that be enough?
|
| I don't think you need a spinach salad. If I were one of your guests, I probably would only eat it out of courtesy - not really into salad with my breakfast. |
