Diced chicken breast
1 whole diced yellow onion, diced Olive oil Goya Adobo seasoning - be generous! (red top/con pimenta) Cook on the stove for about 25 minutes or until the chicken starts browning. It's very good. Serve with beans and rice: 1 can red kidney beans, totally drained 1 can Bush's medium chile beans, NOT drained 1 whole yellow onion, diced Goya Adobo (Red/con pimenta) Oregano Rice Cook the rice - like 2-3 cups dry. Meanwhile, fry the onion. Put onion in a mixing bowl. Heat all the beans and sprinkle adobo generously, and a bit of oregano. Mix it all together. |
I make LOTS of mexican food
All vegetarian though. We just saute some morningstar chikn meal starters, onions and bell peppers. Serve with tortillas, cheese and sour cream. Yum! Also, basic guac is really easy and jazzes up tired tacos. Just combine about two avocados (slightly soft) with lemon juice, salt, tomato and onion. SO GOOD. |
