iPad/Apply Geniuses - Please Help!

I have a mobile business and need to be able to print from my iPad to both a regular printer and a label printer. Here's what I will have on the road with me:

* iPhone with AT&T service, set up as Mobile HotSpot device
* iPad 3 with AT&T service, wifi + 4G
* Printer - just purchased Epson Stylus NX430 Small-in-One - has wifi, and says can print from iPad
* A DC to AC Power Inverter Strip w/USB Port and 3 Outlet to connect my printer to an electricity (couldn't find a "mobile" printer that has wifi).

Here's what I need:

* I need to be able to print certificates and receipts from the iPad
* I need to be able to use the iPhone as a mobile hotspot so that I will have WiFi access from my car or from client's homes without having to log on to their wifi
* I need to be able to print labels through the industry software I'm using from the iPad. I have not been able to find a label printer (Zebra, Dymo, Brother) that has wifi or airprint capabilities. Please help!!
* I will not have a computer with me! So software like WePrint will not help me, because I'd need a computer to use that.

Also, my Epson printer, which has Wifi, will not recognize my phone as a mobile hotspot... Do I need a special app for this?

Yes hold the iPad above your head and shake. If it does not work at first, you must go outside your house in your underwear and continue till the cops come.
