Kabob/tzatziki

Does anyone have a good recipe for kabobs and tzatziki? Thanks!

Basic shish taouk:


1 lb chicken breast , cut into 1/2 inch cubes
2 garlic cloves , peeled and crushed,
¾ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon black pepper
¼ teaspoon allspice
2 tablespoons EVO
3 tablespoons lemon juice

Marinate at least several hours, best overnight. Grill on charcoal grill.

Nothing for the tzatziki sauce, I'm afraid. We usually use hummus or tahina.

This is not tzatziki, but a good yogurt dressing just the same... we use for kabobs/pitas, dip for veg, etc.

drain some plain yogurt, or use greek
stir in some tahini
smash some garlic with salt and add the paste to the yogurg.
add cumin, paprika, chopped parsley, dried mint (I suppose you could use fresh, but I dry my own and it's easier to crush a palmful of dried)
lemon juice, evoo, salt
I add grated onion or cucumber when I have time/energy.
This gets even better if you make it the night before and let it sit in the fridge.

This is my yogurt recipe:

6 oz plain Greek yogurt
1 cup seeded, shredded (or finely chopped) cucumber
1/4 cup crumbled feta
1 teaspoon dried dill
1 tablespoon olive oil
1/2 tsp garlic powder
1/4 teaspoon salt

For the cucumber, I take the skin off with a vegetable peeler, and then continue to use the peeler to shred the entire cucumer into thin slices, and then I take a large knife and chop up the thin strips into tiny pieces -- it takes maybe a couple of minutes if that.

For the chicken, I cut up chicken breasts and marinade in olive oil, lemon juice, salt, pepper, and oregano (and if I am ambitious, minced garlic and onion) for a few hours or overnight and then I just saute them and serve with pitas, fresh chopped tomatoes, and the yogurt sauce.
