I am having a small surprise party for my dh (5 other couples) and have decided to make my life easy and make a big pot of chili. Does anyone have good recipes for any good appetizers, sides or indeed another complimentary dish to go along it, in case some folks don't like chili? I do need to keep everything easy and low maintenance since I have three under four, so fairly "quick and easy" is a must! Or even slightly more time consuming but make ahead will work.

| Cornbread, nachos and/or 7 layer dip, fresh celery and carrots w/ranch dressing or dip, hot dogs and cheese slices (to make chili-cheese dogs), cracker/cheese tray |
| 12:16 has some great ideas. I'd do cornbread and a green salad. Alternative to hot dogs is a pot of spaghetti. Some people like chili mac. And non-chili eaters can just have pasta. |

In addition to 12:16, maybe baked potatoes (to top with chili), as well as sides of sour cream, cheese, chives.

| Thanks for the ideas - all simple and very manageable! I had not thought of the potatoes - I guess I will see how the weather is shaping up next wkend but it sure would be good for today! |

I would make elbow macaroni to go with the chili instead of spaghetti. I know spaghetti is the tradition, but what a pain to eat at a party. I had a party for DH in January and served chili with elbow macaroni and it was a huge hit. Better than spaghetti IMO (and in the opinion of several of the party-goers).
Definitely have a bowl of Fritos too! And jalapenos. |
| May sound weird, but we have always had homemade cole slaw - simple recipe made with green and red cabbage, shredded carrot, mayo, vinegar, salt, pepper. Some of us eat in on the side, but others put it on the chili. Our chili recipe is very spicy, so this cuts that a little bit. |
