Definitely lemon curd in the middle. I love lemon so I'd do it with lemon buttercream as well.

-1 to the bolded: this cake is for a kid. But in general, only do this if the cake is only for adults who like these flavors. I can't stand rum and bourbon, and many adults don't drink.

Consider a raspberry cream cheese frosting!


Is this even a thing? What would you do--add jam to a standard cream cheese frosting? (I have also heard of folks grinding up freeze-dried berries... but as my questions suggest, I have not tried this!)

Not necessarily...my 6 and 10 year olds would rather have the berries!

You could grind up freeze-dried berries and also use raspberry extract. You could also do a raspberry reduction (definitely strain out the seeds). I think either of those methods would be better than jam in terms of flavor--and you don't want the added sweetness on top of the sugar you're using for the frosting.

You could fold raspberry jam into homemade whipped cream if you want a lighter raspberry flavor (again, strain seeds). This would also be good just served as a dollop on the side.

I think all the lemon lovers including myself would love to come over for a slice!

Op here... I went with lemon because that's the the birthday kid would prefer, but yes, you can add jam to buttercream. I recently made these and it was an amazing combination. Tasted like a better version of those raspberry cream filled chocolates in the drug store valentine's box. I was shocked that it came out so good and with such a punch of flavor.
