What to do with (expensive!) assembled Lego sets?

Sell. My friend has made some decent money selling her son's Lego sets online and they have a deal where he gets a cut (he's a teen, so older than your child and has outgrown the movie tie-in interest but will never outgrow building with Legos!).

There are adults out there who will buy these off you, assembled or in pieces. And there are people who would buy them just for their kids to build.

I've used Kragle (aka super glue). I got tired of buying expensive sets, helping them put them together, and my youngest taking them apart an hour later. I don't do it to all, but the ones that take a long, long time to put together, I glue them.

I would disassemble them and let your son create new pieces with them. I do that for my sets so far.. you can take a photo of the completed set.
