| OP, I don't know if you prefer to eat it all now - but I usually make an enormous amount at one time and freeze leftovers in meal-sized bags. Thaw in fridge, reheat with bbq sauce = instant future pulled pork. Or over rice, in tortilla, etc. It's a great "OMG what to do for dinner?" item. |

I did this with leftover pulled beef, but pork would work just as well.
Salad with some pumpernickel bread croutons, leftover pulled meat, shredded turnip, grated smoked cheese, chopped tomato, a little chopped onion, served with a mustard vinaigrette. |

| Another vote for freezing. Does great, and great to pull out later. |
Why, yes. Yes, you can. You can also put it in jambalaya. A little nonstandard, but good. |
