In any case, regarding the bolded part: My kids went through French immersion in MoCo. They are all in their 20s, and all fluent in French (still). In their work, they use French. Many of their immersion friends likewise still use their French in their lives. One works for an NGO that does a lot of work in Africa; another works as a translator/interpreter; another lives and works in Paris as a teacher. Two (that I know of) have become certified translators in France.
So, have no fear that your children will eventually "loose" the language. They will not, if they keep it up - as is the case with any non-native language.
