Here's a favorite of mine. Toasted english muffin, lightly buttered with sliced avocado on top. Delish!

Avocado:
Corn + tomato + avocado + cilantro + black beans + vinaigrette.
In any salad.
Chopped with parsley and olive oil and lemon zest in cous cous.
On any Mexican food.
In a greek pita.
Plain w/salt!

Artichokes:

Hearts of palm + avocado + artichoke salad.
Steamed
Good artichoke dip

Avocado is peel, slice and eat.

Artichokes--buy them in the jar. They are a major PITA to prepare at home and there is a ton of waste.

Artichoke- I cook in a pressure cooker and it takes 10 mins. Serve w/ lemon mayo. Avocado - my fav recipe: http://www.epicurious.com/recipes/food/views/Grilled-Cumin-Chicken-Breasts-with-Avocado-Salsa-10504

Artichoke - second the boil or steam for 35 min. Don't cut all the stem off, though! It is tasty, so leave an inch or so to eat. We dip the leaves in mayo with lemon juice, salt and pepper mixed in. Scrape meat and mayo off with teeth. Take hairy bit out of the heart, dip in mayo, eat with big smile. Love.
