FYI Bakeries freeze their cakes before frosting. It keeps the cakes from crumbling. If you apply a crumb coat while frozen and place in the fridge the night before, it will be perfect for decorating and delicious when serving. From what I have heard, baking 2-3 days prior is the norm.

I would freeze them also and they will be fine, just keep them well wrapped in the fridge or in a tupperware type container, etc.

| Pastry chef here. I can guarantee you that some of the best cakes you've ever had at high end restaurants have been frozen. As were many of your wedding cakes. That cake you're oohing and ahhing over at the hottest new restaurant was most likely made as part of a batch of cakes some other day. |

| It always cracks me up to read the posts of newbie cooks. Georgetown Cupcakes freezes their cupcakes before they ship them. Freezing does not hurt baked goods at all. |
