If it is only for one night, I assume it is not that far away? Maybe he could go for the day into evening (or whatever part is most important) and then head home. Seems fairly likely he will start to come down with it soon too. Should be pretty understandable, and still shows making a big effort.

I am sure he feels like he has to go, and probably he doesn’t want to but feels so much guilt. And if they are outside and he isn’t sick, it’s unlikely that he will pass anything if he doesn’t have symptoms, so that should be fine.
For you though, I’m sorry. My husband left to go to work when we all had the stomach bug, and my youngest was seven days old. I almost divorced him, lol. He felt such extreme guilt and fear about missing work now that he had all these kids to take care of, but still, it was horrible.
Put the kid in pull ups all weekend, watch so much tv and just be easy on yourself, sleep and rest and hydrate. I’m so sorry, hang in there.

He should call his family members and tell them that he has a stomach virus and should he come. Tell them that he has already infected his kid and wife.
