Dairy Free, Gluten Free, Vegetarian Option for Lasagna Dinner

The barilla gluten free line is really good! You could make some kind of pasta with mushrooms and leeks and have some kind of cheese available for the ones who eat dairy to add? IDK honestly making a good dish that is dairy free, gluten free and vegetarian is challenging. 2/3 of those would be easy but 3 out of three ehh

I’d probably do the barilla GF pasta with a kind of ratatouille. And cheese on side if that want that. I’m a vegetarian and would be happy with that.

Trader Joe’s has a really tasty gf tagliatelle right now. As a long time celiac I was pleasantly surprised at its texture - do not overcook. A simple red sauce and Follow Your Heart Brand feta sprinkled on top would be
divine. Katz makes a craveable garlic bread.

That’s sad. I don’t think you have to make something similar for someone that’s dairy free and gluten-free. You could easily make something hearty with veggies like a roasted squash or something with mushrooms. Herb roasted mushrooms over a risotto made with coconut milk would be fabulous. Plus making extras of this will give some folks a side if you wanted to do that.

As a dairy free gluten-free person… Due to pretty intense food sensitivities. I appreciate what you’re doing! I usually have to bring my own food or eat ahead of meals

Remember, you don’t have to swap out ingredients. It’s mostly just not cooking with things that have dairy and gluten in them. Sometimes it takes a little bit of a shift and focus to find the right combination.

The problem is, farro is of course, not gluten free, nor is barley which would be the next best thing. You might be able to experiment and find a gluten free grain with a chewy, nutty texture to take the place of the farro, or just use gluten-free orzo or something.

Came here to recommend this. I substitute quinoa for the farro.
.

NP = holy cow that looks so good. Think I will try to make it tomorrow.

This looks incredible. You could add dairy free, feta or ricotta and pomegranate seeds.

These are good ideas. Along similar lines, came to suggest this: https://www.loveandlemons.com/marinated-gigante-beans/

Personally I would stay away from vegan and gf products as I find them very hit or miss. Stick to whole foods prepared well.

Leave a couple slices of plain bread for the non-dairy person. And if you're committed to the Caesar salad, I'd add another side that would work for these folks like a roasted veg.

PP again: meant to also suggest something like this: https://www.hippressurecooking.com/lentil-risotto-peasant-cooking-under-pressure/

The risotto ideas are good and this would include protein.

This looks like tasty home food for sure. Also, your vegetarians are likely tired of lentils.

As a gf df person I generally agree. Whole food non processed foods are definitely better for the most part. This cook isn’t familiar with cooking for other diets and these items are better than many. Which is why i suggested specific brands that fit the menu.

While everyone has specific preferences these are things you can find at Wegmans, MOMs or Whole Foods easily and some occasionally at regular supermarkets.

It’s good to remember your gluten free person might not me dairy free, your dairy free person might otherwise eat meat, your vegan might not be gluten free. The dish can hit them all and sides like bread or garnishes might not

Def do what’s easiest unless you feel confident in not crossing the streams.

If you want two similar meals just make the same lasagna recipe with vegan mozzarella, beefless mince, vegan parm, gf noodles….all available at Trader Joe’s or Whole Foods

Please don't make the vegetarians and vegans to gluten free.
