I walk my dog in the evenings now the sun is out. I also watch crappy TV too, sit on the deck and have a drink with a neighbor,
I make my own cards for people so sometimes I’ll get crafty and knock out 2-3 cards when I’m home by myself.

My kids are younger and we have to drive them to activities most nights. Here are some of my hobbies:
-Gardening (I have an extensive vegetable and perennial garden)
-Walks with the dog and DH. Listen to an audio book or podcast.
-I resell vintage items on Etsy/Ebay so some time is spent perusing estate sales/auctions/listing items/photographing.
-Various home projects. I keep a running list of items to do around the house and work on them (touch up paint, cleaning grout/ steam cleaning). Listen to an audiobook or podcast.
-take a class! I took pottery and really enjoyed it but with my kids current schedules I’ll need to wait a few more years to get back into that.

Take a "learn to code" class online. Many of them utilize game theory or you build simple games. It's fun and is also an actual skill that could come in handy sometime. And not so different from what you are already doing so shouldn't feel like a slog.

You can also practice a foreign language on Duo Lingo, write in a journal, work your way through a "Great Books" list or a "Best Movies All Time" list, organize your closets, work on a memoir (why not?!), or take up an art or craft, like watercolors or knitting.

What I would do:

Exercise class 3 times a week
Language class or practice once a week
Daily household chores while not in a rush
Watch TV while working on crafting projects (knitting, mending, making clothes)
Cook nice meals and learn to make complex new dishes
Yard work
Maybe commit to music lessons or practice?

(This sounds dreamy — I have two preschoolers and about 2 hours too little time every day)

You're bored starting at 3pm onward? Do you work?

I would enjoy cooking dinner, groceries/errands in a leisurely way, exercise, meeting a friend or neighbor for a coffee or glass of wine.

I have the same question. Do you have a job during the day? I'm sure plenty of businesses need help from 3-9pm, even if you don't need the money.

Sounds like you need a job OP. Or a 2nd one.

I have a never ending list of DIY projects. Now that it’s spring I’m tackling outdoor projects. I take a lot of pride in all of the upgrades I’ve done as I’m a designer by trade.

Go on a walk, Volunteer, read, exercise, take a nice hot bath, plan outings...

How about take up a new sport or hobby like tennis? Read, do puzzles, I like fill-in puzzles. Walk a dog? Walk with an elderly neighbor. Deep clean and purge closets, garages of anything you don't use. Organize. If you find stuff to sell you can put it on ebay.
