Make the stuff you/they like in massive quantities, then freeze in meal sized chunks. Curries and soups and stews freeze wonderfully. These are good easy weekday dinners when you’re tired and in a hurry.
For new things to try that are quick options, I like budget bytes peanut tofu bowls (also excellent with shrimp), stir fry or fried rice with tofu or seafood as the base protein, hummus and veggie sandwiches, avocado pasta. |

Beans and rice cooked in Instant Pot ahead of time. Add salsa, cheese and sour cream (for those who want it) when you come home.

+1. My sister's boys will eat plain pasta with butter (spaghetti only), one type of chicken nugget, apple slices (red apples only cut into slices), bagels with butter, and eggo waffles with Nutella. These kids are 9 and 12. |
