Veggie preparations your picky kids love

I just don’t sweat it op. But I do put veggies in sauces, soups and stews. Carrots in bolognese or chili, sweet potato chili, etc. I eat veggies now and hated them as a kid, so I try not to worry about it. We do eat a lot of fruit and whole grains, so I try not to worry about the lack of veggies. One kid eats more veggies now (like will eat the carrots in soups, loves roasted sweet potatoes, eats broccoli steamed) and the other one still won’t touch most stuff.

I cut the veggies in different shapes ( and serve them as a side ) when I know kid will be hungry.

Cucumbers cut into spears, carrots are crinkle cut, apples to look like boats, etc

If I have time, I'll make a pepper kabob too.

Texture and visual seem to be key with my kid.

Hidden in smoothies - for years I did a smoothie with Greek yogurt, banana, some orange juice or coconut water, frozen strawberries and peaches or mango and then some combo of frozen zucchini, butternut squash and frozen avocado. Kids never knew and I at least felt they were getting some veggies. I’d still always serve veggies with meals, and they did eat a lot of fruit, but I didn’t swear it if they didn’t eat too much of the veggies.

They are teens and still kind of particular about veggies. One mostly likes kale salad, tomatoes and broccoli but I figure those are pretty healthy so she basically has them every day.

Pasta sauces (broccoli; beetroot-delicata; butternut);
Veggie pashtida
Handpies (store bought crust) that they help make.

In the spring/summer we do a LOT of zucchini bread. Use your fave banana bread recipe but replace the mashed bananas with grated zucchini. Chocolate chips or walnuts are optional add-ins. Sometimes I put a lot of extra zucchini in (usually when I’m trying to finish the zucchini!) and the kids still eat it.

On the other end, no disguised at all, my kids love frozen peas still frozen and things of they’re sufficiently curried.

If there is a veggie they eat, serve every day - you can also add another, but at least you'll get one in!

Broccoli steamed in veggie stock
Peas with rice and some butter
Roasted broccoli with garlic
Potato latkes

All other veggies they prefer raw.

My very picky 10 yo will only eat raw veggies. I try to keep things I know she likes cut and prepped in the fridge, at eye level.

Things she likes:
Romaine lettuce
Green beans
Broccoli
Cauliflower
Carrots
Organic girl protein greens box mix

I cut Bell pepper into flowers with Tony cookie cutters and make pictures. It’s just raw veggies.

They also like pizza veggies. Roasted zucchini and tomatoes topped with mozzarella, Parmesan, panko, and Italian seasoning. Toss the veggies in olive oil and roast for ten minutes, add toppings, broil for 3-5 min.

I wish. I LOVE Indian flavors but my DH and kids won’t touch them. Sigh. Sounds delicious to me.

my picky eater can not stand anything with sauce or spice beyond salt. Definitely a texture thing and a spice issue for them.

My kids were the opposite and only liked veggies raw and crunchy. I always served a raw veggie plate with a dip at dinner so they could try different flavors and textures, and slowly started blanching the veggies so they’d get used to cooked ones. Funny enough, now roasted is their favorite preparation.

OP if you’re not willing to deploy any strategies besides new preparations, it’s possible there just aren’t any magic preparations that will solve this problem.
