An extremely easy marinade for grilled chicken. I don't use measurements, so I'll just give you an estimate.

Get chicken THIGHS. Boneless and skinless are best, but not a must. Let's say you have 8. Pat them dry and sprinkle with salt and pepper.

Toss in a Ziploc bag with maybe 3 Tbsp. of olive oil, the juice of half a lemon, and some fresh thyme. Seal the bag and massage it. Put in the refrigerator for 8 hours if possible, but 2 is fine.

Grill as you would any chicken. Simple and delicious.

I really like Half Baked Harvest’s salads. For a summer party, I choose one with grilled meat and then have all of the components separate so people can build their own. We also grill slices of bread on the side. Easy for entertaining because you can prep a lot in advance.

Corn salad with grilled corn, sliced cherry tomatoes, feta, basil, balsamic.

I also love real cooked baked beans. I throw a mix of beans - black, kidney, pinto, garbanzo into my ceramic bakeware with homemade bbq, and bake for several hours. So good.

I also love the chicken sausages flavored in various ways (in every major store). They cook up brilliantly in my air fryer.

I’m a big fan of couscous-bases salads. There’s one in Ina Garten’s make ahead cookbook that people always love. There’s also a great zucchini tart recipe in there that is so good
