Please help me feed my family for 10 days without an oven or stove

I love street tacos but we don't have a Costco membership anymore. Didn't use it enough, it's pretty far from where we live now.

You can also buy a hot plate -- single stove burner -- for $12 at Home Depot. With that and all your other small appliances, you shouldn't even miss the range.

Also, the delivery delays are nationwide and have been going on for a year. My sister in law ordered furniture in March that was just delayed to November.

For 10 days, I'd go with some good frozen meals - frozen chicken cutlets, for example. Vegetables do great in the microwave -- corn is a classic, but you can also do eggplant or "baked" potatoes too. For meat, consider getting a fully cooked ham or sausages that can be reheated if you are missing that.

I'd go with lots of crudite myself -- dips and veggies. Good bread from the bakery. Hummus or other dips.

If you are willing to spend $20 or so you can get a single electrical burner that will probably let you do things easily with a stove.

And get some good takeout with leftovers. That could easily cover 1/2; ready made food at the grocery store is a bit cheaper for that reason if budget is an issue.

You can make American style tacos in the crock pot. Use lean beef or ground turkey, add some diced onion and pepper (if your kids will be ok with that), a can of black beans, some frozen corn, the taco seasoning and only about 2/3 of the water called for. Put it on high for 2 hours, or low all day long. Stir occasionally, and if needed add more water.

Serve on tortillas with whatever toppings you all like (cheese, guac, avocado, etc).

And you can make omelettes in the microwave - they aren’t bad at all.

Chili and chicken noodle soup in the instapot, kids usually eat those
Barbacoa for tacos also in the instapot or crockpot

The delivery went fine the first time, just a 5 day wait. That stove was broken. The one to replace that was another 5 days. The installer converted it to propane even though we have gas. You can see the gas hookup plainly and he asked and I told him gas but maybe he just figured I don't know what I'm talking about? Now it'll be another 10 days to swap this one out. I guess they're punishing us for being problematic.

I did a home renovation and cooked for a while without a kitchen:

[I would make a pound and keep it in the refrig so I always had some avaiable for my pickey eaters]
2 - frozen pizza in the toaster oven
3 - frozen waffles for dinner!
4 - pizza bagels
5- hot dogs in the toaster oven
6 - chicken nuggets and french fries in the toaster oven
7- buy ready made meatballs and do meatball subs
8 - mac and cheese
9 - will your kids do a veggie chilli in the insta pot?
10 - soup in the microwave

Given you kids ages - make 1 or 2 nights a picnic at the park. Make sandwiches, a bag of chips and a picnic blanket.

Im getting my kitchen redone and I plan on just cooking everything in the Instant Pot.

Sorry I thought hotplates were for outdoors. I associate them with camping not kitchens.
