how would you serve pulled pork for supper?

I found some good looking pulled pork at Costco and bought it.... now I'm wondering how to serve it for dinner. I've only ever had it as a sandwich at a BBQ joint. Can I just serve it on a plate as a meal for supper? What sides would you serve with it? No one in my family will eat coleslaw, and corn on the cob is out of season....?

You could make some polenta as a side - it soaks up the juices nicely and does not have an overpowering flavor to compete with the pork. Bonus: it only takes 10 minutes to make and all you need is the corn flour, some salt and water.

Did you get the Kirkland brand that doesn't have sauce or the Jack Daniel's brand with sauce? I bought both but have't used the sauceless one yet. For the Jack Daniel's one, I just served with toasted sandwich thins and a big salad. The sauce was REALLY sweet so the salad with vinegarette was refreshing and ballanced the sweetness.

If you bought the sauceless one, you could either do a sweet bbq sauce with it or more of a vinegar based one. I think the sides would depend on which you did.

There is nothing wrong with serving it sandwich style for dinner! Like a better version of sloppy joes.

Second the broccoli slaw (not too sweet) to put on the pork, toasted buns. Kettle chips. Carrot sticks.

I want to thank everyone for not mocking me for buying pulled pork and then not having any idea how to serve it!

I served it last night just plain, with oven fried diced yams (peanut oil, salt, and a little lemon-pepper seasoning) and sauteed green beans with garlic. I also found some decent looking corn on the cob, and everyone liked it, so a successful dinner.

Now I still have a lot of pulled pork left, though. Can I make a pulled pork pot pie?

Pulled pork is very yummy on quesadillas or in tacos. Make some fresh pico de gallo to go with it....
