Rice and bean recipes

Does anyone have any good and easy rice and bean recipes? I made the NYT one, which is basically onion, stock, rice, and a can of black beans. It’s good but not super flavorful. I’d like to add some flavor to it but I’m a novice. What’s an easy way to add some more flavor?

I thought that you wanted to fix your bland dish. If you were to retry, I would add it during the simmering.

This is a great idea or one of those envelopes of something- chili seasoning, cajun seasoning, fajita seasoning. so easy.

This is not at all like a real New Orleans red beans recipe (I used to live there), but I love it anyway. The "Skinny Tuesday Red Beans" in the Moosewood Lowfat Favorites cookbook. I think it is the only vegetarian cookbook to ever win a James Beard? It's like a veggie chili but with totally different flavors -- dijon, brown sugar, marjoram, thyme, and I forget what else. It's probably my favorite recipe. I've made it with and without the okra, good either way. It's all over the internet but this one seems to not be modified, which is good:

I’m no expert, but at a minimum I’d add garlic and bell peppers. Whatever seasonings you like could be added, as well.

Alternatively, you could try using black bean soup as a base for the rice (I think it’s vegetarian, but you can double check the ingredients), and then add extra seasonings to taste.

We add chili powder while cooking the stock / water, before adding the rice. Amount of chili powder varies with how spicy you like it.
