| Does anyone have any good and easy rice and bean recipes? I made the NYT one, which is basically onion, stock, rice, and a can of black beans. It’s good but not super flavorful. I’d like to add some flavor to it but I’m a novice. What’s an easy way to add some more flavor? |

This is a great idea or one of those envelopes of something- chili seasoning, cajun seasoning, fajita seasoning. so easy. |

This is not at all like a real New Orleans red beans recipe (I used to live there), but I love it anyway. The "Skinny Tuesday Red Beans" in the Moosewood Lowfat Favorites cookbook. I think it is the only vegetarian cookbook to ever win a James Beard? It's like a veggie chili but with totally different flavors -- dijon, brown sugar, marjoram, thyme, and I forget what else. It's probably my favorite recipe. I've made it with and without the okra, good either way. It's all over the internet but this one seems to not be modified, which is good:

I’m no expert, but at a minimum I’d add garlic and bell peppers. Whatever seasonings you like could be added, as well.
