Breakfast burritos are a hit here. I make a bunch, wrap them up, put them in the freezer and then we can just grab them. My kids like them with eggs, pico de gallo, spinach, cheese, black beans, and avocado on the side. Sometimes we add sweet potato, which ups the fiber, but also the carbs.
If you're vegan you could scramble tofu instead of eggs, and skip the cheese. If you're looking for low carb, you could use a low carb tortilla or make lentil wraps (note: I've never frozen a lentil wrap so I don't know). |
I'm the burrito poster and I love shakshuka. I can't tell if OP is vegan or just vegetarian. I once made substituted the tofu eggs from here https://jessicainthekitchen.com/vegan-shakshuka/ in this recipe: https://www.punchfork.com/recipe/Chickpea-and-Kale-Shakshuka-Smitten-Kitchen except I used spinach because I don't like tofu. It was pretty good. I think real eggs are better in it, but it was good. There are also tasty green shakshukas. |

Bed of sautéed spinach topped with a poached egg. Black beans, salsa, avocado, and a fried egg. Can add cilantro or sliced jalapeños if you want. Corn tortilla optional. |

Ditto shakshuka. Even if you don’t eat eggs, use the same idea and stir in lentils or chickpeas or something for the protein.
Some people are into “dense bean salads”; I’m into hot dense beans on toast. Or use a high fiber tortilla, cut into triangles, toast, and scoop up the mixture. |

I love a warm corn tortilla spread with refried beans, topped with a fried egg, guacamole, chopped tomatos and maybe cheese.
