Does anyone have a Turkey or Chicken Chili recipe to share?

My husband has gotten pretty intolerant to red meat, but absolutely loves chili. I’ve tried a few meat recipes substituting turkey, but not great so far. I’d love to try any new recipes out there. Thanks

Buy your packet of chili spices from Hard Times Cafe - at one of the cafes or on the Internet. I recommend the Texas version or the Cincinnati version. The latter is a sweeter taste. Buy your ground beef or ground chicken or ground turkey at your local supermarket. Follow the directions and heat at medium low on the stove or in a slow cooker for about 3 hours - the beef in particular needs that.
I used to cook chili in local chili cooking tournaments, and the Hard Times version is the real deal - excellent.

Add more stuff into it. If you are making a pure meat chili, it's going to be super noticeable that you aren't using beef.

I use ground turkey and add:
black beans
kidney beans
diced green pepper
lots of diced onions
corn
diced carrots
LOADS of seasonings

You can add a little liquid smoke to help make up for the lack of flavor in the leaner meat.

But you most likely just need to drop the idea of making a perfect replica and just find a suitable replacement.

Also, buy the higher fat content ground turkey. The lowest fat content ground turkey is SO rubbery it's hard to come back from.

Mine is basically the above, plus a jar of salsa, red or green. In my family we put cinnamon or pumpkin pie spice in our chili (based on Hard Times Cafe version)—delicious. To thicken, I sometimes add a can of pumpkin. It’s virtually tasteless, but adds texture (and nutrition).

I like a green chili with chicken. I do a can of white cannellini beans, a can of hominy, shredded or ground chicken, onion, garlic, cumin, fresh cilantro, hatch or poblano green chilis and some jalapeños if you want a little more spice (I like to roast them first on the fire and take out the seeds). You can also add cubed potatos.

NYT white chicken chili recipe is basically what 1657 is describing & it's delicious! I do fresh corn in summer, hominy in winter. Also add cut up poblanos.

I like to add an extra can of green chiles, plus a couple chopped serranos, but you can cook it as-is if your spice tolerance is low. Sometimes I'll chop up some chicken sausage and add that in too.

I also use the NYT one linked above, and love it. Shredded chicken is SO much better than ground. Add lots of white beans, green chiles, dried oregano, chili powder, fresh cilantro.

Sort of. My chest recipe is to get Whole Foods white bean and Turkey chili, throw it in the Instant Pot (I don’t think the beans are cooked enough) and start adding things. Usually I’ll add ground dark meat turkey or shredded turkey thighs, chili powder, green chilis, caramelized onions, and top with cilantro. I serve it with corn chips and guacamole — which some eat separately and others add to their bowls.
