Professor?

I’ll be teaching a course as an adjunct in the fall, but don’t have a doctorate. Will the students just call me Professor (last name)? Probably a silly question, but I honestly can’t remember what I called my teachers who didn’t have a doctorate.

Adjunct professor is still a professor, unless you want them to call you by your first name, then you can make it clear in class.

The students likely don't know (or care) about your degree.

A professor without a PhD can be addressed as "Professor" or by their title (Mr., Ms., or Mrs.). If you are unsure, it is generally acceptable to address them as "Professor".

It's actually an adjunct teacher or staff so no need to use Professor unless that person insists you call them with the title.

We have a few adjunct professors in our engineering department. One of them didn't have a Ph.D. Because his official title is "Adjunct Assistant Professor" ("Assistant" despite being retired from the industry) he is often referred to as "Professor X" which sidestep the need to explain he doesn't have a doctorate. Works out well.

I called all of my non-doctorate college teachers Professor unless they specified otherwise.

Maybe a little off topic. I have seen a number of schools use the title Professor of Practice to refer to non-tenure track positions that are filled by those with extensive industry experience rather than those with an academic background.

Depending on the school, I have the kids won’t know whether the professor has a degree or not.

Your name is Mary Smith. On day 1 you introduce yourself as “Ms Smith”, however on the students schedule, Schhol registrar website, your office door, the syllabus, etc says SMITH or M SMITH or MARY SMITH. The students will still refer to you “Dr Smith”

They will — mostly — call you what you ask them to call you on the first day of classes. The default will be Professor Holmes. If you want them to call you something else — using your first name is common at many schools — then it’s on you to tell them what to call you.

I never called my teachers anything at all. "Excuse me?" was all I ever needed to get their attention.
