Please share recipes that are lower carb. It would be great if they are not too reliant on fatty meats and cheese (trying to watch cholesterol).

Eating lots of carbs and calories are what causes fat gain and cholesterol issues.
Eating low carb and low fat = constipation and feeling bad.

I make this with ground turkey and it's delicious - even my kids like it. https://www.the-girl-who-ate-everything.com/keto-egg-roll-in-a-bowl/#recipe

You can serve as a lettuce wrap or over cauliflower rice or just eat as is

I try to eat low carb, but rest of my family doesn’t, and most times I manage to cook one dish and just replace the rice/pasta/carb side with a salad for myself, so I bet you could start by just adjusting your current meals.

Same. I tried to make low carb dishes substituting carbs with cauliflower, almond meal or pork rinds, and I just didn't feel great eating that way. I do make zucchini noodles, freeze in packs in the summer when plentiful and cheap and eat with meatballs during the winter. I also eat a lot more cabbage.
