| I have pounds of sweet bell peppers of different colors and I'm trying to think of a way to use them for dinner tonight. Any ideas? Thanks! |

| Stew them with chicken, maybe a tomato or two (optional), basil, and a cup of wine (or stock). The sauce comes out so rich and amazing. Thicken it toward the end with just a little roux and serve over pasta. It's one of my all-time favorites. |

if you do this, you can do it in a heavy pot with some olive oil, butter, garlic salt, and italian seasoning for a ballpark-type meal. Or you can do it in a pan, add a few tomatoes (canned diced work fine) and some parmesan along with italian sausages, and serve over pasta. |

| Cut them horizontally, stuff with ground beef (cooked), top with cheese, and pop in oven. Stuffed peppers is one of our favs. in our house (we add other things too - onion, bacon, etc.) |

For that volume, I say sweet pepper gazpacho:

| I like them grilled for sausage peppers and onions. My nieghbor makes a great pepper salad. I would have to search up the recipe but it is beautiful. Dice them up samll and all of the colors together make them so festive. I will put the recipe on here when I find it. |
