Does anyone else go up 1-2 lbs after eating roasted cauliflower? I tend to eat a decent amount (e.g 12-15 ozs) for dinner. My weight always spikes the next day. What gives? Also, does that amount seem like a lot? I usually eat it with 4 oz grilled chicken or fish. No grain. Thoughts appreciated!

It’s water retention plus the actual weight of fiber-rich food that requires some time to digest. In short, nothing to worry about. Keep eating your veggies.

Are you adding oil? If not - agree with the others: cauliflower wont make you fat and likely give you extra minerals. The country is vitamin/mineral deficient but not deficient in: fat, protein, or carb. cauliflower helps fix this.

It's just water weight. Who cares what you weigh day to day, look at the big picture.

This. You’re eating nearly a pound of cauliflower. Yeah that’s not normal. Your weight fluctuating daily is. Stop weighing yourself everyday.
