Easy, diabetic meals?

I was just diagnosed as diabetic and am wondering what low carb meals I can have on hand for last minute changes in plans, or moments when the power goes out and I can’t cook anything.

Tonight I need something that can be cooked in 20 minutes before soccer practice, but all I have in the house is pasta.

I have a lot of fresh veggies, but I eat those at lunch (I have 3 cups of broccoli, red pepper, tomatoes, and carrots for lunch).

I need something fast with protein; vitamin B12 and potassium would be good, too. I am low in those.

I’m at a loss. I have no idea what to eat.

Can of tuna in water, a little olive oil, balsamic vinager, salt and pepper on low carb bread as a sandwich.
Big bowl of berries and full fat greek yogurt.
Bag of cauliflower rice with other veggies.

Easiest way to reverse diabetes and cook is to go carnivore. It’s easy to have burgers and meatballs in the freezer for lazy days. Mix it up with chicken thigh, steak, roasts, fish (very occasionally due to high mercury), eggs, small amounts of cheese, dairy etc

You will lose weight, feel better and reverse diabetes. Make sure to get enough electrolytes and you are good to go.

Your diabetes will be gone in a month or less and after 18-24 months (on average), you can start adding back other types of foods and experiment on how you feel.

Carnivore is a powerful elimination diet.

If you like eggs, an omelet or scrambled eggs with veggies is always fast and easy.

I’m sure you’re worried about your diagnosis, but hang in there. You’re going to be ok!
