| You can also make the number of cupcakes you want, and place the remaining batter in a round cake pan. The cake round can be wrapped and frozen and iced later. |

+1 It's easiest just to make the whole batch and freeze the ones you don't want right away. |

I just divide the powder in half (you can weigh it if you have a kitchen scale) and halve the recipe (if it calls for one egg beat it slightly and use half, or use all of it...it'll be fine). I would not mix then freeze.
