Baking/using only half a cake mix?

My DD likes Funfetti cupcakes on occasion (please spare me the lecture, everything in moderation), but we don’t need 24. I’m considering only baking half and freezing the other half of the powder to use later. The ingredients are easily half able. But will it turn out?

You can also make the number of cupcakes you want, and place the remaining batter in a round cake pan. The cake round can be wrapped and frozen and iced later.

I've done it and it works fine, OP. Works with brownie mix as well.

Oh good grief. Just make all the cupcakes. Freeze half for later if you must.

It's easiest just to make the whole batch and freeze the ones you don't want right away.

I just divide the powder in half (you can weigh it if you have a kitchen scale) and halve the recipe (if it calls for one egg beat it slightly and use half, or use all of it...it'll be fine). I would not mix then freeze.

I would make the other half then freeze the baked cake to use for cake pops or trifle.
