A whole tenderloin will weigh five or six pounds, which will leave you with more than enough for six people.
If you don't want to have a lot of leftovers, you could cut off (or ask your butcher to cut off) some individual steaks, then freeze them. |

If it is on sale, which it often is this time of year, you can purchase 1 1/2 pounds extra and use that for stroganoff. Buy a stroganoff seasoning packet, cut the 1 1/2 pounds of meat into one inch cubes, cook it in the stroganoff mix and freeze for later. |
| I assumed 1/2lb per person, 6lbs for 12 people (including the vegetarian and picky kids who won't eat any). But I'm also serving turkey on the side for people who want more meat. So it's a generous assumption given the crowd. |

I like to buy a full tenderloin and trim it up myself. Use the very center portion for your guests, one side will have some extra steaks and the other side will have some scraps (which make delicious stir fry or tartare). |
Ugh -- don't use tenderloin as stew meat. It is dry and spongy if it gets cooked through. |
