Another turkey buying question

We'll have 4 adults, 3 little kids, and I live for leftovers. 1) What size turkey should I get, and 2) what day should I buy if I intend to buttermilk brine it for 48 hours?

Usually they say 1-1.5 lbs per person. 12-14 lbs is more than enough. It’ll give you left overs and plenty to make into soup, etc.

We did the buttermilk brine last year and it works very well! I’d definitely get it this weekend. If it is frozen you’ll need to start thawing today.

You can easily cook it the day of…spatchcocking makes it cook soooooo much faster.

I pulled my 6.5 pound turkey breast out of the freezer an hour ago. A whole bird will take much longer to thaw. Buy today!

Wait, buy frozen today and put in the fridge right away? Are you serious? Does it need that much time? I was going to wait until Monday...

I can't remember what we did in previous years. I usually do the dry brine method of salting it frozen and leaving it in the fridge, with it uncovered the last day to dry the skin. Does it really take 5 days to thaw???

I think it’s like a day for every 4-5 lbs. Google will be your friend here although you might still end up having to do a cold water bath

They want to brine for 48h. If you leave it in a fridge a 12-14 lbs Turkey will definitely take about 3 days, so you gotta do it now. I mean you could always thaw in a water bath too if you wanted it to be a lot faster.
