This is on repeat a lot in my household, Couscous with roasted root vegetables and cucumber salad. Kind of a mezze platter.

Roast cauliflower and whatever other root vegetables you've got, tossed in olive oil and salt until it's nice and crispy

Meanwhile, chop up some cucumbers and make salad with olive oil, vinegar, salt and pepper

Make the couscous: fry one onion in olive oil, then when super browned add a can or two of drained, rinsed chickpeas, fry that some, then add a cup of couscous, fry that a little til it smells nutty, then add the boiling water and cover five minutes. When the couscous is done, add the zest and juice of one lemon.

If you want to go crazy, add pita, hummus, olives, and Trader Joe's canned stuffed grape leaves which are (I think) vegan.

For the non-vegans, you can add some greek yogurt and feta cheese to the meal
