Quick lunch ideas post-hiking?

I don’t know why I’m drawing such a blank on this one. Please help!

We are soon traveling on a fun/easy hiking trip. Our accommodation are close to hiking trails and our plan is to venture back for an easy lunch each day. We have four days. So far I’ve come up with:

Croissant sandwiches with potato chips, crackers and dip.

Hummus and pita, meats and cheeses.

Any ideas for the other two days or should I just repeat? We have a large Yeti cooler I will be packing before we leave home, so nothing too crazy or difficult would be best, also nothing that requires cooking.

We're a sandwich for lunch type family so we'd get a few baguettes and customize our own footlong sandwiches (turkey, lettuce, cheese , BLT, etc.)
Wrap on paper towel and the in foil to avoid soggy bread while in the cooler

Fav cookies and chips and easy fruit for sides.

We've done variations with pita pockets and soft tortillas (wraps).

And definitely not easy to keep cold in a yeti cooler (which is surprisingly not really that deep or big).

Yeah, just no to salads. These sound nice and all, but not in this situation.

I have the largest size and I still wouldn’t pack salads and crap like that for this kind of trip. It’s not the time or place to be bougie.


We have one of the larger yeti coolers too and it barely holds cans/water (+ ice) for a family of 5.
I think the design compromises depth and space for all the layers of insulation to keep things cold.

Which version do you have? The tote bag style, then yes.

Chicken caesar wraps - take previously grilled chicken, cut into strips, wrap up with chopped romaine lettuce and caesar dressing in a tortilla.

Pasta salad - cook the pasta and prep other ingredients ahead of time, assemble on site.

Add fruit, granola bars, cheese sticks, sliced veggies and ranch dip.

You have something like a Tundra 65 and it doesn't hold drinks? Then you're doing something wrong. I have one and it holds a lot of everything.

Frittata can be made ahead and served cold or room temperature. Build your own tacos. Cold fried chicken.
