| It’s my parents anniversary but they are currently home bound due to illness, so I’m bringing a celebratory meal to their door. I will be bringing their favorite stuffed peppers, a bagged salad, but is there anything else that would pair well? They aren’t bread eaters due to diabetes. I’m hoping to make the meal, at least the stuffed pepper portion, stretch into 2-3 meals for them. |

There are variations in stuffed peppers recipe. Are you making one with rice mixed into the beef?
Polenta works. Cornbread. Baked potato/scallop potatoes. Mac n cheese. fwiw, my kids like to have bagel bites or tacquitos as their side with stuffed peppers. |

I agree it depends on the kind of stuffed pepper.
If they are Greek style, which we like a lot here, I might do a dip with vegetables. We love both fava (the Greek dip, not the bean) and tyrokafeteri in our house. If you aren't putting meat in the peppers, I'd do something with protein, maybe grilled chicken breast. |

If someone is avoiding bread due to T2, it's almost certainly because they are limiting carbs. I wouldn't serve stuffed peppers, which almost always have rice in them, and also rice on the side in that situation. |
Usually the rice is what makes it a stuffed pepper. No need to add more rice by making it a side. |
Quoting myself because I realize I'm making an assumption about the carbs. If they aren't avoiding carbs, then roasted potatoes for a Greek style roasted pepper, or a simple pasta dish like pesto, for an Italian style would be a nice choice. |

I make stuffed peppers without rice inside, so what you say makes sense. I do 50/50 ground beef and pork and the insides of the veggies that I scooped out. |

It’s not a mind blowingly flavorful dish so you might want to adjust your expectations. It’s a simple inexpensive dish that most cultures have some version of. That said, I really enjoy Chef John’s recipe and make it frequently. |
