Suggestions for my new ice cream machine?

I'm so excited for this thing to freeze. I'd love some suggestions for relatively not-bad-for-you sorbet, granita, frozen yogurt ideas. I can't wait to give the kids some frozen treats made from real fruit and less (or no!) sugar. And maybe a lovely little coffee granita for me and the mister.

I'm also thinking about chocolate sorbets. Häagen-Dazs makes the most wonderful chocolate sorbet - it's fat-free and much lighter than ice cream, very refreshing with a nice cocoa flavor.

So. Any good recipes to share?

No sugar? I've been making ice cream and sorbets and frozen yogurt for years and there's always sugar!

This fellow's book on ice cream is supposed to be tops. I'm going to buy it one of these days ...

OP here. I did a trial run tonight with cherries and yogurt - no added sugar - and it was delicious! This time of year, with fruit as nice as it is, I think I should be able to get away with plenty of low- or no-sugar recipes. Nice ripe peaches, nectarines, mangoes, maybe figs, cherries...

So glad you are already enjoying your machine, OP. One thing though...you can get away with little or no sugar in milk based frozen treats, but if you try to make sorbet without sugar...even if you use Splenda....you will end up with frozen ice. The sugar creates the texture in sorbet, so I'm afraid you'll need it. Try blueberry ice cream, since they are in season now

His book and blog are the best. The book (The Perfect Scoop) just came out in paperback so it's a little cheaper. Totally not healthy or sugar-free (sorry OP) but his Salted Butter Caramel Ice Cream is outrageously good http://www.davidlebovitz.com/archives/2007/04/salted_butter_c.html.

Right, right, right. I wasn't thinking about the food science/chemistry part of it. I'll remember that.

No Splenda, though. I'd eat the sugar before I'd eat Splenda. I have just never been a fan.

I highly recommend The Perfect Scoop book. It contains frozen yogurt, custard, sorbet, sherbet and granita recipes. Of course some of recipes are definitely not so good for you, but I sometimes make just half the quantity and DH and I also have very small portions. Just made the green tea ice cream and the strawberry frozen yogurt. They were both delicious.

Greek yogurt, fresh strawberries, 1 tsp vanilla extract. It tastes like pinkberry. So yummy. Mango is also delicious.

There is a recipe on Lebovitz' blog for chocolate ice cream using agave nectar. Haven't tried it yet though.
