| Spouse and I will both be out during dinner hours a couple of times this week. Our middle school aged kids will be dropped off after sports practices and need dinner. I’m looking for suggestions of dinners that I can make ahead and leave in the fridge for the kids to reheat in the microwave. Thanks for your ideas! |

Lasagna
enchiladas |
|
Chili and cornbread
Spaghetti |
|
Does it have to be hot? Tuna salad. Breakfast for dinner: breakfast sandwiches, breakfast burritos, waffles with sausage and fruit.
Leave meatballs, shredded cheese, shredded lettuce for meatball subs. |
| Baked ziti and a salad. |

This is pretty much where crockpots shine (if you hav one that turns to warm). Set it up in the morning, have it go to warm when done and everyone serves themselves when they choose to eat.
If no crockpot, soups and chilis are good foods to make and reheat. |
| Basically, any leftovers can eat reheated in the microwave, OP: pasta with meat sauce, Mac and cheese, chicken and rice, quesadillas, soups, leftover Chinese takeout, basically anything that isn’t crispy that could turn mushy. |
| Fried rice |
| What about some prepared food from Costco? Mac and cheese, rotisserie chicken and Cesar salad. Chicken tacos. |
| Maybe I’m missing something, but tons of things can be reheated in the microwave?? I make plates, wrap them in tinfoil and put in fridge. Kid can take their plate out and heat in microwave. |
Thanks to all from OP. This is what I did and it worked great. Plan to make enchiladas the other night this week. Appreciate the ideas! |
| We make this NYT slow cooker chicken taco recipe a lot. It's excellent and reheats really well. https://cooking.nytimes.com/recipes/1019693-slow-cooker-chipotle-honey-chicken-tacos |

My 8th grader would probably make himself pasta with marinara, cut up some cucumber and red pepper if I asked him to, then eat a bunch of green olives, some raspberries, a sprite, a spindrift, and a big bowl of ice cream or chocolate if he can find it. Maybe popcorn or chips later.
Together they'll be fine! |
| Crab cakes. My kids love crab cake night |

So I recognize this is too late for you OP, but we made this tonight and it's perfect for this thread:
https://www.hellofresh.com/recipes/korean-beef-bibimbap-5ab3b883ae08b53bb4024952 We don't order from hello fresh, that's just where the recipe happens to come from. It's great because we stir fry everything, make the rice, and then everything goes in individual containers in the fridge. Then people can combine however they like and heat in the microwave for a minute. Easy to scale up based on number of peopel and how many leftovers you want. We also sometimes sub in other veggies though we made it as described tonight and it's a good combo. |
