Best watercress salad recipes/entrees to serve them with?

I wound up with some watercress, and I've never used it before. I've looked up salad recipes, and some sound promising but I'm interested to hear if you have any favorites and/or what meals/entrees you serve your watercress salad alongside.

Also this was in Salt Fat Acid Heat and I served it with her roasted chicken recipe. Heaven.

Thank you all! I do have the NYT Cooking subscription, and I have a butter lettuce lover in my life, so that Via Carota salad is definitely getting made. And the other one looks good too!
