What to do with leftover poached chicken

I made a batch of stock with drumsticks the other day and need to use the meat. I thought I would do chicken salad and chicken soup but neither are sounding very good right now. Any ideas? It’s about 7 drumsticks worth.

Chicken salad, wraps with chicken and whatever veggies you like, stiry fry, throw it in some pasta sauce or bechamel.

I’d just shred the drumsticks and put them in salads.

Fried rice.
Chicken pot pie filling - freeze it in pie-sized portions until you need it.
Freeze it.
Mix with mayo and whatever flavors you like for sandwich filling. I make mine with chimichurri and mayo.

Stir fry — I’d probably do spinach, or broccoli as a base, with sesame oil, oyster sauce, garlic, ginger, and cilantro, over brown basmati. OR
Chicken hash.
