White lasagna recipe with spinach?

I have a 14 year old Autistic child who will literally eat zero vegetables or fruit. She loves cheese and pasta but has never had lasagna because the only lasagna ever offered to her has been traditional (red sauce, meat). She will not eat red sauce.

Last night she said “mom. Will you make me lasagna?” and I said “what kind” she said “white.” I said how about like with lots of cheese and maybe spinach?” And she said OKAY. She said OKAY?!? Only someone with an Autistic child knows how major this is that my kid will try spinach.

So I need a really good recipe. I’ve looked on the Internet of course but I wonder if anyone has a really good one or pointers? I probably will start with not too much spinach.

This is a really good white lasagna. You could sub in spinach, just make sure you wring it out well. I bet you could just use thawed frozen spinach…

I did this a few months ago and it was amazing. Dice and sauté a white onion, then add 2 boxes of frozen spinach and cook out the water.

Oh my gosh, Op! Wi you please let us know how it turns out and how she likes it? My DS5 is also on the spectrum and I am looking for new things for him to try. Hope she enjoys!

this is OP. thank you everyone! this is the one I'm going to try first, because it looks the most simple, I can add just a small amount of spinach, and I'm not a big cook.

when I say my daughter won't eat any vegetables, I mean ANY. Not for years and years. Not one bite. I mean, even pizza sauce or fruit flavor candy or anything with ANYTHING green even oregano. This is really extreme. So, when she said she's open to lasagna with spinach I have to jump at it but only put a bit of spinach that she won't really taste. Some fo the others look good but I think where the main feature is the spinach won't really work. It can't look to green. But if she goes for this one, then I'll make it a few times and then move on to another. The only bit of concern I have with this one is that the cheese is fairly minimal. I think she's looking for a really gooey, cheesy experience. But trying it tonight! I'll let you know.

My very anti veg kid will eat lasagna with spinach as long as the spinach is mixed with the cheese (as opposed to a layer of just spinach). You can add spinach to the cheese layer of any recipe if it works for your daughter OP.

Making a cheese sauce is key here. Part of what my kids don't like about standard lasagna is the thick gobs of ricotta. If I make a bechamel or use mascarpone instead, it goes a bit better.

Be sure to double or triple the recipe and freeze a few in case she likes it.

Actually I’m afraid she’ll take one look and refuse to even try it. That happens a LOT, which is why I don’t do a whole lot of cooking. I’m not sure what I’ll do with a huge lasagna if she doesn’t like it because I’m on a restricted diet and nobody else in my house will eat it.

Will she eat mac and cheese? I sometimes put spinach (frozen) in my mac and cheese. It won't taste that different to lasagna but will be quicker and less to throw away. Then if she likes it, you can make a lasagna. I put lots of hatch chili flakes in mine to replicate the TJ's hatch chili mac and cheese. It's so tasty!

For next time; What about a white pizza with spinach and whatever else she likes, and plenty of cheese? The spinach gets cooked and less vegetal in the oven.
