If the sushi is prepared correctly the fish has been frozen to kill parasites. I really hope this is true because we eat sushi once a week. We live in CA in an area that has very good sushi everywhere.
My favorites are spicy tuna and salmon which are raw but we also like rolls that have shrimp tempura in them. Many of the signature rolls have both raw and cooked. |
