Tonight after work we are going to get our Christmas tree and set it up (not decorate it until the branches settle and fall down a bit, but we'll get it set up in the stand and probably put the lights on) and I need to make a quick dinner at some point.
I have some boneless chicken breast in the fridge, and I'm pretty well stocked on staples (fresh salad vegs; onion/garlic; pasta; eggs; canned vegs like beans & tomato sauce/paste; rice; bread crumbs; variety of cheeses; etc). I get home around 5:30 and DH gets home around 6:30, so I have time for prep or to get something started. Then we'll get the tree and come home and eat around 7-7:30. Any ideas for something that's quick, easy, no fuss? |
| Mix together bread crumbs, grated Parmesan cheese, oregano, thyme, salt and pepper. Dip chicken in melted butter or brush with olive oil and then coat with crumb mix. Bake. Yummy! |
