Quinoa recipes as main dish

Until I got my rice cooker, it took me a while to get on the Quinoa bandwagon.

I now like the taste and texture of it in the right recipes.

Do you have any Quinoa recipes to share?

Recipe 1:

Quinoa with scallions and parsley
Diced tomatoes
Tuna or salmon or shrimp with lemon
Lentils
Serve the above warm or cold
Sprinkle with crumbled feta or goat cheese

Recipe 2:

Quinoa with black beans and diced tomatoes as stuffing in a baked bell pepper.
Serve hot with melted cheddar cheese and sprinkled with taco seasoning.

I just put a bunch of cooked quinoa in chicken soup instead of noodles. Delicious!

I just made it tonight with coconut milk (and a splash of lime) instead of water. Not a main by itself but really tasty and you could add veggies. I put chicken over it.

+1 look for a copycat of LPQ’s chicken quinoa soup w/ chickpeas.

I make quinoa as a main dish a lot—maybe a few times a month. Recent hits have been quinoa with chickpeas, dried apricots, sautéed spinach, and a drizzle of olive oil; and quinoa with pesto, poached chicken, corn, and red bell peppers.

My kids really like quinoa broccoli cheddar casserole.

I regularly make my own cheddar sauce with milk, cheddar cheese, and butternut squash. You could come up with your own recipe or probably use something like Velveeta?

Anyway, I steam and chop broccoli, and mix that with quinoa (cooked), and cheese sauce and spread into a casserole dish. Sprinkle the top with paprika and breadcrumbs. Bake until the top is crispy.

I made this with broccoli in place of red pepper today, I haven't tried it yet (taking some of it for lunch tomorrow), but it looks promising.

Quinoa cakes! Quinoa, diced bell peppers, scallions, cheese if you eat it, a tablespoon or two of flour, salt, pepper, and egg to glue it together. Bake or sauté until golden.

What brand of enchilada sauce do you use for this?

I use quinoa as a base for Bolognese when the kids are having spaghetti. It's actually really good.

Or, this isn't really a main dish but is good with shredded chicken:
1 cup quinoa
2 cups chicken broth
One thinly sliced onion
1 pint cherry tomatoes, halved

Saute the onion in some olive oil. Add the quinoa and heat, stirring, until coated with olive oil. Add the tomatoes and broth, simmer until the liquid is absorbed and quinoa is cooked.
