Cookbook and cooking class recommendations for 11 yr old

My 11 year old DS has become more interested in cooking. Can anyone recommend a relatively easy to follow cookbook? Also interested in cooking classes in or near Bethesda for kids. L'Academi de Cuisine has a few, but not much for this age.

Interested in others recommendations as well. I'd really love me a series of classes that build skills for my tween. Lacademie offers individual classes with no continuity. They only seem to offer the cooking series during the summer.

Parks & Rec offer classes. Virginia seems to have additional places for cooking classes like Culinaerie or Cookology.
