I’m looking for a spring salad I can fix for a work potluck baby shower. I need to fix it at 6:45 AM, but we won’t eat it until 1 PM. I plan to add the dressing just beforehand, but also considering a green bean salad or something else like that.

You can do something like this:

I pack salads for lunch all the time and they are fine. If you want to add something that is crunchy, just have that packed in a separate container and add to the salad when you add the dressing. |

I like what budget bytes calls "fridge salads" (although, I think a salad made in the morning that you don't dress until lunch is probably fine).

Massaged kale salad with parmesan actually improves sitting in the dressing a few hours. I think it could be pretty much whatever dressing you want, but I make one with olive oil, lemon juice, soy sauce, and garlic. Cut out the stalks (or buy pre-cut from Whole Foods in the bag and pick them out) and massage in the dressing. Add the grated parmesan and mix. |
